01 - 1 lb smoked or fresh sausages, sliced into thick rounds

02 - 4 celery stalks, sliced
03 - 2 medium apples, cored and chopped
04 - 1 large onion, diced
05 - 2 medium carrots, sliced
06 - 2 cloves garlic, minced

07 - 2 tbsp olive oil
08 - 2 cups low-sodium chicken or vegetable broth
09 - 1 tbsp Dijon mustard
10 - 1 tbsp apple cider vinegar
11 - 1 tsp dried thyme

13 - ¼ tsp black pepper

# Directions:
01 - Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add sausage slices and cook 5 to 7 minutes, turning occasionally, until browned. Remove with a slotted spoon and set aside.
02 - In the same pan, add diced onion, sliced carrots, and celery. Sauté for 5 minutes until slightly softened.
03 - Add minced garlic and cook for 1 minute until fragrant.
04 - Stir in chopped apples, then return browned sausage to the pan.
05 - Pour in broth, Dijon mustard, apple cider vinegar, thyme, salt, and black pepper. Stir well to combine.
06 - Bring mixture to a gentle simmer, cover, and cook for 20 minutes, stirring occasionally, until vegetables are tender and flavors meld.
07 - Taste and adjust seasoning if necessary. Serve hot, optionally garnished with chopped parsley.
