# Directions:
01 - In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt until thoroughly blended.
02 - In a separate mixing bowl, whisk the egg with cream soda, melted butter, and vanilla extract until the mixture is smooth.
03 - Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined, leaving some small lumps in the batter.
04 - Warm a nonstick skillet or griddle over medium heat and lightly grease it with butter or neutral oil.
05 - Spoon tablespoon-sized portions of batter onto the hot skillet to create small round pancakes approximately 2 inches across.
06 - Cook pancakes for 1 to 2 minutes until bubbles appear, then flip and continue for another 1 to 2 minutes until golden and fully set.
07 - Transfer the cooked pancakes to a wire rack and allow them to cool completely.
08 - Carefully insert a lollipop stick into each cooled pancake.
09 - Divide the melted white chocolate into several microwave-safe bowls; tint each portion with different food colorings as desired.
10 - Dip or spread the colored chocolate over each pancake pop, coating completely.
