# Directions:
01 - Heat olive oil in a pot over medium heat. Add diced onion and sauté until translucent.
02 - Stir in canned tomatoes and vegetable broth. Bring to a gentle simmer and cook for 15 minutes.
03 - Remove from heat and allow to cool slightly, then transfer mixture to a blender. Blend until smooth and creamy.
