11 - 4 large flour tortillas
# Directions:
01 - Boil diced sweet potatoes in salted water until tender, approximately 10 minutes. Drain and lightly mash with a fork, leaving some chunks.
02 - Heat olive oil in a skillet over medium heat. Sauté red onion, bell pepper, and garlic until softened, about 4 minutes. Stir in mashed sweet potatoes, cumin, chili powder, smoked paprika, salt, and pepper. Cook for 2 more minutes, then remove from heat.
03 - Lay one tortilla flat. Spread a quarter of the sweet potato mixture over half of it. Sprinkle with cheese, then fold tortilla in half. Repeat with remaining tortillas.
04 - Heat a clean non-stick or cast-iron skillet over medium heat. Cook the filled tortillas in batches for 2 to 3 minutes per side, pressing gently, until golden brown and cheese is melted.
05 - Transfer cooked quesadillas to a cutting board and slice into triangles. Serve warm with optional salsa, sour cream, or guacamole.
