# Directions:

01 - Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper liners.
02 - In a medium saucepan, melt butter over medium heat. Add onion and sauté until soft, about 2 minutes.
03 - Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and milk, cooking until thickened, about 2 to 3 minutes.
04 - Remove from heat, then stir in diced chicken, peas, carrots, corn, thyme, salt, and pepper. Allow mixture to cool slightly.
05 - In a large bowl, whisk together flour, cornmeal, sugar, baking powder, and salt. In a separate bowl, whisk milk, oil, and eggs. Add wet ingredients to dry, stirring until just combined.
