04 - Sprinkle flour over the vegetables and cook while stirring for 1 to 2 minutes to form a roux.
05 - Gradually whisk in chicken broth and heavy cream, simmering and stirring constantly until the mixture thickens, approximately 4 to 5 minutes.
06 - Add cooked chicken, frozen peas, dried thyme, oregano, and red pepper flakes if using. Season generously with salt and black pepper; stir to combine, then remove from heat.
07 - Roll out one pie crust and fit it into a 9-inch pie dish, trimming edges as necessary.
