01 - Fresh lemon juice, 1/3 cup
02 - Granulated sugar, 1/4 cup
03 - Water, 1/4 cup
04 - Lemon zest, 1 lemon

→ For the Spritz

06 - Chilled sparkling water, 1 cup
07 - Chilled non-alcoholic sparkling wine, 1/2 cup
08 - Ice cubes, as needed
09 - Lemon, 1 small, thinly sliced
10 - Fresh mint sprigs, optional for garnish

# Directions:

01 - In a small saucepan, combine lemon juice, sugar, water, and lemon zest. Heat over medium heat, stirring constantly until sugar dissolves, approximately 2-3 minutes. Remove from heat, stir in vanilla extract, and allow to cool completely. Strain through fine mesh to remove zest particles.
02 - Fill two large wine glasses halfway with ice cubes.
03 - Pour 3 tablespoons of cooled mock limoncello syrup into each prepared glass.
04 - Add 1/2 cup chilled sparkling water and 1/4 cup non-alcoholic sparkling wine to each glass.
05 - Stir gently to combine all ingredients.
