# Chef Secrets:

01 -
  • The whole meal comes together in 15 minutes, and that includes chopping time if you work at a reasonable pace.
  • It actually tastes substantial and spiced like real tacos, not like you're eating sad health food.
  • Lettuce wraps feel like a fun way to eat, even though you're technically being responsible.
  • You can load them however you want—some people go heavy on cilantro, others skip it entirely, and both versions are equally valid.
02 -
  • If your filling looks too wet when you're done, it means either your tomatoes released more liquid than expected or you didn't let it simmer long enough—two extra minutes makes all the difference.
  • Don't assemble these more than a few minutes before serving, or the lettuce starts to wilt and everything gets soggy no matter how good it tastes.
03 -
  • Cook your meat on medium-high heat in a nonstick pan without crowding it, and you'll get actual browning instead of steaming, which deepens all the flavors considerably.
  • If you like extra heat, add the cayenne, but also taste before you do—you can always add more spice, but you can't take it back.
