# Directions:

01 - Set the oven temperature to 400°F and allow it to fully preheat.
02 - Cook pasta in heavily salted boiling water for 2 minutes less than package instructions. Drain and set aside.
03 - Heat olive oil and butter in a large skillet over medium-high heat. Add chicken pieces with 1 tablespoon Cajun seasoning, salt, and pepper. Cook until browned and cooked through, about 6 to 8 minutes. Remove chicken and keep aside.
04 - In the same skillet, cook diced onion and bell peppers for 4 to 5 minutes until softened. Add garlic, smoked paprika, and chili flakes if using, then sauté for 1 minute.
05 - Lower heat to medium. Pour in heavy cream and milk, stirring to deglaze the pan. Simmer for 2 to 3 minutes.
06 - Incorporate three-quarters of mozzarella, cheddar, and Parmesan into the sauce, stirring until completely melted and smooth.
07 - Return the chicken to the skillet. Add cooked pasta and toss until evenly coated. Adjust seasoning with additional Cajun seasoning, salt, or pepper as desired.
08 - Place the mixture into a lightly greased 2-quart baking dish. Sprinkle remaining cheeses evenly on top.
09 - Bake for 18 to 20 minutes until the cheese is golden and bubbling.
10 - Sprinkle with chopped fresh parsley and a pinch of Cajun seasoning before serving.
